Description
A new addition to our lineup, the 2025 Pinot Noir Rose has been created to offer a fresh, fruit-driven interpretation of our favourite variety.
The 2025 vintage provided ideal conditions with good winter and early spring rains giving way to warm and calm conditions throughout November and December, providing excellent conditions for pollination and fruit-set. An extremely dry summer required attention balancing water and yields. The warm dry conditions persisted well into Autumn providing perfect conditions for the ripening phase with harvest on the 4th of April 2025.
The wine is made from D5V12 clone Pinot Noir grapes. The fruit was crushed & destemmed into a large open fermenter. The free-run juice was taken off skins after only 1 hour and the skins pressed immediately after and pumped to tank. The juice was then inoculated with a neutral yeast and fermented on lees in a closed stainless steel fermenter at 15 degrees for 4 weeks. At the completion of fermentation the wine was cold stabilised for two weeks before being racked and filtered. Bottled on the 5th June 2025. Only 1400 bottles produced.
